Cheesy Asparagus

This easy side dish will be a crowd pleaser. Asparagus is one of my favorite vegetables. Add bacon, garlic, and cheese to that, it's even better! Make this to accompany your main dish, or eat it on its own.


1 bunch or more asparagus

3 strips bacon cut into cubes

2 cloves garlic

1 /4 cup Shallots/Red onion

2 Tbs white wine

1 /4 cup Mozzarella Cheese, shredded

1 /4 cup Parmesan cheese grated

Water for steaming




Step 1

1 Heat griddle to low. Chop bacon and put on griddle to render. Once rendered, add onion and slide out of the bacon grease. Add some olive oil to the bacon grease and add asparagus. Add salt and pepper to asparagus.

Step 2

2 Move asparagus around to mix with salt pepper and bacon grease. Put water on asparagus and cover to steam. Steam for about two minutes and stir. Add some cooking wine and cover for 2-3 minutes. While that is steaming, check and stir bacon.

Step 3

3 After 2-3 minutes, check the asparagus and remove the dome and add garlic and let crisp. When to your liking, pull asparagus together and put bacon and onions on top. Then put mozzarella cheese and then parmesan cheese on top. Put water on each side and cover till cheese is melted (approximately 1-1 1/2 minutes).
