Low Carb Fried Chicken Tenders

Low carb or Keto fried chicken tenders on the Blackstone griddle seems strange, but they're pretty dang good. I used a combination of Carbquik and pork rind panko to bread these in. Remeber to add some salt! I was very light handed because of the pork rind breading, but ended up needing salt.


6-8 chicken tenders

2 cups Buttermilk

1 tsp worstishire sauce

1 tsp soy sauce

2 cups Carb Quick

2 cups pork panko

oil for frying



1. Take chicken strips and put in bowl. Add buttermilk, worstishire sauce and soy sauce and let marinate for several hours.


2. In three dredging bowls put   #1 2ea eggs   #2 carb quick   #3 pork panko


3. Preheat griddle to low/med. Put oil down for a shallow fry.


4. Take chicken tenders and put in carb flour first then roll it in your eggs and finally in the pork panko. Keep doing that until all chicken is breaded. Put them on the griddle and cook for 2-3 minutes and flip. Continue cooking and flipping until internal temp of 165 is reached.
