Thinly slice the yellow onions and the white part of the green onions. Cut the green tops of the green onions into 2-inch pieces. Slice the steaks into thin strips. Add to a bowl with all marinade ingredients. Mix well and let it marinate for about 15 minutes. Add a little oil to the griddle. Cook the yellow onions and the white parts of the green onions until they start to caramelize. Mix up your stir fry sauce in a small bowl while the onions are cooking. Move onions aside. Turn griddle heat up to about 450°F. Add a bit more oil and spread the marinated beef thinly on the hot griddle. After about 30–45 seconds, start flipping the beef and mixing it with the onions. Pour the stir fry sauce over the beef and onions. Mix everything well so the sauce coats the meat evenly. Toss in the green onion tops, stir it all together, and cook for another minute or two. No deep fryer, no mess… just that flat top sizzle.
