Chilaquiles Might Be Your New Favorite Breakfast!
I took this classic Mexican breakfast and gave it the full griddle treatment—crispy chips, saucy goodness, sunny-side-up eggs, black beans, queso fresco, and a little love from my Fiesta Dust and Heifer Dust. If you’ve never made chilaquiles before, you’re missing out on one of the most flavorful ways to start your day!
Whether you're using leftover tortillas or starting fresh, this recipe comes together fast and packs a punch. I show you how to build the flavors right on the griddle and why this dish might just replace your usual breakfast go-to. It’s smoky, spicy, cheesy, and just plain good groceries.

📋 Chilaquiles Recipe
Ingredients:
15 small corn tortillas
Avocado oil
2 tbsp Bacon up
1 can taco fiesta black beans
4 large eggs
Hussey's Fiesta Dust
Salsa Verde:
9 tomatios, skin removed and cut in half
1 poblano peppers, cut in half and seeded
2 jalapeno peppers, cut in half and seeded
1/4 white onion, root and skin removed
4 cloves garlic, peeled
1/4 cup cilantro
juice of one lime
2 tbsp chicken powder
Salt and pepper to taste
Directions:
1. preheat griddle to med/high and put down some avocado oil. Add the first five salsa verde ingredients to the griddle and char. When charred to your liking, add to a blender. Add 1/4 cup of water and blend well.
2. Once blended add the rest of the salsa Verde ingredients and blend well. Add seasoning to taste. Add to a bowl and set aside.
3. Cut tortillas in bite size pieces. Add oil and bacon up to griddle and add the bite sized tortillas. Mix the tortillas up and shallow fry them. Turnoff one far burner while frying the tortillas.
4. While tortillas are frying, add the black beans to the other side of the griddle and warm them up. When the chips are fried to your liking, add some salt. Move tortilla chips to the bottom of griddle and add some oil to the cool part of the griddle and put down your eggs.
5. Season eggs with Hussey's Fiesta Dust and cook to your liking. While eggs are cooking, add some salsa Verde to the chips and mix well.
6. When eggs are done, put some tortilla chips on a plate followed by some black beans on the side and top with the eggs.
