These burgers was a recommendation from a fan based off the L&L Burger from LeRoy and Lewis BBQ in Austin Texas.
Ingredients:
2 lbs ground burger (I took 1 lb 80/20 and 1lb ground wagyu)
1 tablespoon Heifer Dust
8 slices of American cheese
Sliced pickles (I used Grillo brand)
Mayo (I used Dukes)
1 large onion, diced
1 tablespoon Bacon Up
Directions:
Pre-warm the griddle to 225 degrees.
Mix the meat up in a bowl loosely and add Heifer Dust.
Weight balls into 8oz patties. Using a ring mold to help make a nice circle.
Season the patties more on each side and place on the smoker.
Smoke until about 125 degrees and remove. This will take about 30-45 mins.
Pre warm a griddle on high. Add Bacon Up and onions. Cook till nice and caramelized.
With the griddle nice and hot, sear the burgers off until a nice crust is formed. Add onions and then cheese.
Toast the buns with some mayo or butter. Remove and lay to the side. I added more mayo at this point.
With the burgers done, add burger to the bottom of the bun then add onions to the top and then pickles. Add the top bun.
