Smoked Chicken w/Alabama White Sauce

Smoked chicken with Alabama white sauce on the Big Green Egg is a different play on BBQ that was made famous from Big Bob Gibson's restaurant. This smoked chicken recipe will be loved by all on any kind of smoker.



Ingredients

Chicken Seasoning:

1 ½ tbs salt

½ tsp pepper

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

Alabama White Sauce:

¾ cups mayonnaise

⅓ cup apple juice

¼ cup lemon juice (1 large lemon)

1 tbsp garlic powder

1 tbsp prepared creamy horseradish

1 tbsp coarse ground pepper

1 tsp mustard powder

¼ tsp salt

¼ tsp cayenne pepper

Chicken:

4 chicken halves

Directions

Step 1

1. Preheat smoker to 350 degrees. Spatchcock two chickens. Cut the membrane that holds the two sides together and separate into two chicken halves. Add some oil to chicken and season with chicken seasoning.

Step 2

2. When chicken is seasoned and Egg is up to 350, add a small chunk of apple wood for smoke and add chicken to a raised direct grate. Cook until breast meat is 165, checking every 20-30 minutes. While chicken is cooking, make the Alabama White Sauce.

Step 3

3. Whisk all ingredients of the sauce together in a large bowl and set aside

Step 4

4. After 15-20 minutes check chicken and flip. Let cook another 15-20 minutes and flip and check temp. Continue checking and flipping until done. When done remove from Egg and put in bowl with sauce and coat chicken with white sauce.
