Steak Quesadillas on the Blackstone Griddle

Boy we love quesadillas, but realized talking with the wife, I haven't filmed a video of them. Cross that off the list!



Ingredients:

Steak marinade:

1.5 lbs sirloin or flank

1.5 tsp salt

1 tsp pepper

1-2 tsp chili pepper

1.5 tsp cumin

1 tsp coriander

1 tsp onion powder

1 tsp garlic powder

1/2 juice of lime

zest of 1 lime

1-2 tbsp EVOO

Quesadilla:

8 oz sour cream

Cholula chipotle hot sauce

Squeeze of lime

8 oz Hand grated colby cheese

8 oz Hand grated monterey jack

1 yellow onion, chopped

1 can Hatch green chiles

6 Xlarge flour tortillas

1/2 stick butter




Directions:

 

1. Tenderize the steak and cut off the excess fat. Cut into small cubes. Mix marinade ingredients in a small bowl and mix well. Add meat and mix well.

 

2. Preheat griddle to low on one side and high on the other. Add oil to the hot side of griddle and put chopped onion  down. Sweat the onions and then move to the side of griddle. Put marinated steak down where onions were and spread out. Cook through flipping often. When cooked, top steak with juice of half of lime, zest and mix. Remove steak to a plate. Finish onions and turn down the two high burners to low.

 

3. When onions are soft, remove to a separate plate. Clean off the griddle and melt butter on whole griddle.

 

4. Add tortillas to griddle and add white cheese to half of the tortillas. Then add some steak to the cheese. Add onions and chilis followed by yellow cheese. Fold in half and set aside on griddle to melt cheese and toast the tortillas. Keep doing these until all are done remembering to flip the tortillas to toast the other side.

 

5. Garnish with sour cream and hot sauce and enjoy
