Ingredients
1 lb macaroni, cooked according to directions, drained
¾ lb mild cheddar grated
¾ lb colby jack cheese, grated
4 oz gouda cheese grated
½ cup graded parmesan cheese
4 oz cream cheese
¼ cup butter
¼ cup flour
4 cups half & half
Directions
Step 1
1. Cook noodles per box instructions for al dente. While cooking, grate the cheese except the cream cheese. Drain noodles. To the pan add 1/4 cup butter and melt. Add flour and cook off for a minute or so to make a roux. When roux is cooked off, add half & half and whisk together.
Step 2
2. Start adding the cheddar cheese followed by the Monterey jack and gouda. Save some cheese for the top of the casserole Mix that well. As it gets mixed, add parmesan and cream cheese and mix till melted. If it gets too tight, add more half & half. Season with salt and pepper.
Step 3
3. Add cooked macaroni to cheese and stir it all up. Butter the bottom and sides of an aluminum hotel pan and add macaroni to the pan. Top the macaroni with the remainder of the cheese. Bake uncovered in a 350 degree oven for about 30 minutes.
