Blackstone Hibachi Recipe

f you’ve ever sat at one of those Japanese steakhouses watching the chef flip shrimp into his hat and thought, “Man, I wish I could do this at home,” — I’ve got you covered.


Today we’re making full-on hibachi right on the Blackstone… and I’m telling you right now, you don’t need a fancy setup or a $150 dinner bill to pull it off. We’re talking tender steak, juicy chicken, fried rice that actually has flavor, and vegetables with real caramelization — not that soggy stuff.


The secret? It’s not tricks… it’s doing things in the right order and understanding a few key techniques that most folks get wrong.


Let’s make some good groceries.

Cook Time: 30 minutes

Total Time: 1 hour (plus 1-4 hours for rice cooling)



Ingredients


Fried Rice:

- 2 cups jasmine rice (400 g)

- 2 cups water (480 ml)

- 1 tsp chicken powder (5 g)

- 1 tbsp avocado oil (15 ml)

- 1 cup mixed vegetables (150 g)

- 2 eggs

- 3–4 tbsp soy sauce (45–60 ml)

-2 tsp sugar

- 2 tbsp griddle butter (30 g)


Protein:

- 2 ribeye steaks (1 lb / 450 g total)

- 2 chicken breasts (1 lb / 450 g total)

- Salt, to taste


Vegetables:

- 2 zucchini

- 1 yellow onion

- 8 oz mushrooms (225 g)

- 1 tbsp oil (15 ml)


Griddle Butter:

- 1 cup butter (226 g), softened

- 3 tbsp soy sauce (45 ml)

- 1 tbsp garlic (15 g)


Yum Yum Sauce:

- 1/2 cup mayonnaise (120 ml)

- 1 tbsp ketchup (15 ml)

- 1 tbsp sugar (12 g)

- 1/2 tsp garlic powder (2 g)

- 1/2 tsp onion powder (2 g)

- Pinch of salt

- 2 tbsp heavy cream (30 ml)

-1 tbsp melted butter


Instructions


1. Cook rice with water, chicken powder, and oil. Rest 15 minutes, then spread out and chill for at least 1 hour.


2. Prep all ingredients: slice zucchini, dice onion, slice mushrooms. Make griddle butter and yum yum sauce.


3. Cook vegetables on low heat with oil until caramelized. Do not salt. Remove and set aside.


4. Increase heat to high. Cook steak and chicken whole for best sear. Flip and cook to proper temperature. Rest 5 minutes.


5. Add oil and cold rice to griddle. Break apart. Add vegetables, eggs, soy sauce, and griddle butter. Stir-fry.


6. Chop steak and chicken. Return to griddle with butter, onions, mushrooms, and soy sauce. Toss together.


7. Plate rice, vegetables, and proteins. Drizzle with yum yum sauce and serve.

I sure like the way you explain what you are doing my problem is I live in Canada we don’t have the brands of condiments so I have to change it a little anyway keep up the good work and I will be joining your website thanks again I am a newbie just bought my 36 inch Blackstone and I am learning thanks to you Dreb

Huss, you make it look easy. I've been doing it wrong for a while but I'm giving it a try your way today! Thanks for the griddle butter & Yum Yum sauce recipe along with the step by step instructions. Always enjoy good groceries on the Blackstone.
