Cauliflower and Bacon Stir Fry

If you're doing a keto or low carb diet, this is a great recipe for a side dish or a meal. Cauliflower and bacon stir fry is flavorful and filling.



Ingredients:

1 head of cauliflower broken down into manageable florets.

4 strips bacon cut into cubes.

1/2 onion chopped

2 cloves garlic

1 cup Parmesan cheese

2 tbsp Butter

Olive oil

Salt

Pepper

Water for steaming




Directions:

 

1. Preheat griddle to low or 315 degrees and put down bacon. Work bacon around to render some grease. Move to the side.

 

2. Put some oil down and add cauliflower to the griddle laying flat to get good contact. Squirt some water on the cauliflower and cover with a dome to steam. Let steam for 2-3 minutes. After 2-3 minutes remove dome and flip cauliflower and check for doneness. Add more water and cover with dome for another 2-3 minutes.

 

3. Add onion to the bacon and cook till onion is translucent. Mix with cauliflower. Add garlic using a garlic press and mix. Add salt and pepper and mix. Add a little more oil and mix well. Grate fresh parmesan over the top. Mix and add more parmesan. When mixed up and cheese is melty add butter and mix. Plate it up and enjoy
