Cheesy Ranch Potatoes

Cheesy ranch potatoes are already one of my most popular Blackstone recipes — but I made them better. The secret? I used the Mike Rowave (that's microwave for the rest of y'all) to par cook the potatoes first, and it changes everything. Faster cook time, better texture, and the Blackstone still does what it does best — giving you that perfect crispy finish with loads of cheese and ranch flavor. Ingredients:
Ranch Dressing:
1 cup mayonnaise
1 cup Buttermilk
1 package Hidden Valley Ranch dressing mix
Cheesy Ranch Potatoes:
4 slices thick bacon, cut into pieces
6 stalks green onion chopped
4 large russet potatoes
Hussey's Chicken Dust
2 tbsp butter
1 tbsp garlic clove, minced
8 oz Colby jack cheese
Directions:
1. Preheat griddle to low. Add cut up bacon to griddle.
2. Mix ranch dressing ingredients in a mason jar. Put lid on and shake to mix. Set aside. Mix up the bacon so it all renders.
3. Chop green onions and separate whites from green and set aside. Add some oil to the potatoes and then add salt. Microwave the potatoes. and cook till almost done and let sit for 10-15 minutes to mimic day old potatoes. Cut potatoes into large chunks.
4. When bacon is rendered, move to the side of the griddle. Add the potatoes to the bacon grease. Season with Chicken Dust and mix up well.
5. When potatoes are mixed, creep temp in the middle to medium and let potatoes cook. Use water to steam the potatoes. While potatoes are cooking shred the cheese. As the potatoes get close to being done, add the butter. When butter melts, mix well and then add the white part of the green onion and one tablespoon of garlic.
6. When onions start to wilt put a cooling rack on griddle followed by a pan. Add the potatoes to the pan. Add the shredded cheese to the potatoes followed by the bacon. Put water down around the pan and cover to melt the cheese. Move the pan to the cutting board.
7. To finish, drizzle the Ranch Dressing over the top and top with the green part of the green onion and enjoy
Chefs Note:
Add some sliced smoked kilbasa to the potatoes while cooking to make it a meal.
