Chipotle Bowls

If you are a fan of Chipotle Bowls, this will be your new favorite. Made on the griddle for a fraction of the cost and delicious as it gets. The chicken thighs make this dish a new to go to. Give it a try, you won't regret it.

Ingredients:
Marinade:
2 tbsp Avocado oil
1 tbsp Hussey's Fiesta Dust
1 tbsp Hussey's Chicken Dust
1 small chipotle in adobo sauce (from a can, use more if you want it spicier)
1 1/2 pounds boneless chicken thighs.
Corn Salsa:
1 can golden corn w/peppers, drained
1/2 medium red onion, diced
1/4 cup cilantro, chopped
juice of 1/2 lime
1/2 tsp Hussey's Fiesta Dust
1/2 tsp Hussey's Chicken Dust
1 tbsp avocado oil
Cremma:
1/2 cup sour cream
juice of 1/2 lime
1/2 tsp Tabasco sauce with chipotle
1/2 tsp Hussey's Fiesta Dust
Bowl:
1 large red bell pepper, chopped
1/2 red onion, chopped
1/2 tsp Hussey's Chicken Dust
1/2 tsp Hussey's Fiesta Dust
1 can black beans
2 bags readymade cilantro rice
Directions:
1. Mix ingredients for marinade together in a zip lock and massage to mix. Add chicken and massage to coat chicken and let rest 20 min to 24 hours.
2. In a bowl, mix corn salsa ingredients together and set aside.
3. In another bowl, mix crema ingredients together. Set aside
4. Preheat griddle to low. Put down some avocado oil and add vegetables. Season with Chicken Dust and Fiesta Dust. After cooking for a few minutes, move veggies to the side and increase griddle temp to med high. Add more oil and put chicken down. Cook for 3-4 minutes and flip. Cook for another 3-4 minutes. Check internal temp and lower the griddle to low heat and cook till internal temp is 180 degrees.
5. When chicken is done, slide to the side and turn off that section of the griddle. Add the can of black beans to the same side as the chicken and veggie's Season beans with Fiesta dust and Chicken Dust
6. In the middle of the griddle add the cilantro rice and some water to heat through
7. Remove chicken from griddle and chop and add some lime juice to the chicken.
8. To build: Add some rice to a bowl. Add some chicken followed by beans, veggie's, corn salsa and a drizzle of crema. Garnish with chopped cilantro and a drizzle of lime juice. Enjoy
