Equipment Needed:
Sous Vide
Vacuum Bag Sealer
Griddle
Ingredients:
2 lb. sirloin filet
1/2 tsp salt (1/4tsp per pound)
Husey's Heifer Dust
2 tbsp Beef Tallow or avocado oil
1/2 stick butter
Directions:
1. Take sirloin filet and add salt. Put in a vacuum bag and seal. Put in a sous vide set at 130 and let it go for 24 hours.
2. After 24 hours, remove from bag and make au jus if you want. Place sirloin on a rack and dry with paper towels.
3. Rub meat with beef tallow or some oil and season with Hussey's Heifer Dust and let sit a few minutes.
4. Preheat griddle to high in the middle and med high on the ends.
5. Put down some oil and put down the sirloin to sear the outside. Before flipping, rotate the meat and then flip. Sear all sides of the meat.
6. Turn the griddle to low and add a half stick of butter and baste the meat in the butter. Remove sirloin to a rack and take the butter left behind and pour over the meat. Let rest 5-10 minutes. Slice and enjoy
