Old-School Weeknight Tacos (Hussey Family Style)

Simple, nostalgic tacos just like weeknight dinners growing up—seasoned ground beef, crunchy shells, and classic toppings made this a week night meal the family will love.

Ingredients:
For the Taco Meat:
- 1 lb (450 g) ground chuck (80/20)
- 2 tbsp (30 g) tomato paste
- 1–2 tbsp taco seasoning (or Fiesta Dust)
- 2–4 tbsp water
- Optional: 1/4 cup diced onion
For the Tacos:
- 8–10 hard taco shells (or soft tortillas)
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup sour cream
- Taco sauce
Description:
1. Brown the Beef:Cook ground beef over medium heat until browned. Add onions if using.
2. Season:Add tomato paste, seasoning, and water. Stir and simmer until coated but not watery.
3. Warm Shells:Heat taco shells in oven or on griddle.
4. Assemble:Add meat, then cheese (to melt), then lettuce, tomatoes, sour cream, and sauce.
5. Serve: Enjoy immediately. Optional: crush leftovers into taco salad.
