Ingredients:
3 lbs Bologna (whole chub)
4 tbsp mayonnaise
4 tbsp Sweet Rub or your favorite BBQ rub
Directions:Â
1. Remove packaging and score bologna about 1" deep and criss cross cuts to make a diamond pattern. Add mayo and rub all over the chub of bologna. Sprinkle liberally with favorite rub. Try and use something with some sweetness.

2. Get smoker up to 275 degrees. Add your favorite smoking chips and smoke at 275 for 3 hours or until internal temp reaches 140 degrees. Slice and add to sandwich, eggs or eat it by itself.

3. If making a sandwich, toast some sourdough bread on griddle. Put some butter down and fry the bologna. Add mayo to bread. Add a slice of American Cheese to the slices of bologna. Top bread with bologna and add bologna topped with shredded lettuce and fresh tomato slices.
