My family loves this chicken pinwheel recipe (except Mason 😝 ). Like spinach dip stuffed chicken, but what makes this great, is the crust the Blackstone puts on the chicken. Here's the ingredients. Feel free to sub what you want.
Ingredients
4 chicken breasts
2 tbsp Lawry's Season Salt
2 tbsp Heath Riles Garlic Butter seasoning
splash red wine vinegar
Filling:
1 /2 block cream cheese 8 oz spinach (or even spinach and kale mix) Sautéed in butter and garlic, salt and pepper
1 /2 cup mozzarella cheese
1 /4 cup parmesan cheese
Directions
Step 1
1 Butterfly the chicken breasts and put in a zip lock and pound thin. Take a pan and add a tablespoon of butter to pan and add spinach. Add salt and pepper and 1-2 cloves of crushed garlic. At the end of the cook, add some red wine vinegar.
Step 2
2 Put spinach mixture in a bowl with 1/2 block of cream cheese. Add the cheese and stir well.
Step 3
3 Season chicken with garlic butter seasoning and Lowery's season salt. Put about 1/4 cup of spinach mixture on each chicken breast and spread to cover chicken. Roll up the chicken breast. Store in fridge for 30-45 minutes to let everything set up.
Step 4
4 Cut chicken into pin wheels about 1/2" wide. Get griddle to 375-400 degrees and put down some oil. Cook a few minutes on each side.
