Crack Chicken Sandwich

Ingredients:


  • 4 boneless skinless chicken thighs

  • 1-pound thick cut bacon

  • Hussey's Chicken Dust

  • 4 jalapenos chopped, without ribs and seeds

  • 8 oz cream cheese, softened

  • 8 oz shredded mild cheddar cheese

  • 8 oz shredded mozzarella cheese

  • 3 green onions chopped

  • 1 packet dry ranch seasoning

  • 1 French loaf of bread

  • 8 tbsp mayonnaise

  • 8 slices Havarti cheese

  • 8 slices pepper jack cheese

  • 1 stick butter

Directions:

 

1. Preheat griddle to low and add bacon. Cook to your liking.

 

2. While bacon is cooking, season the chicken with Chicken Dust. When the bacon starts to render, slide the bacon over and add the chicken to the bacon grease.

 

3. Cut the jalapenos in half removing the seeds and ribs. Check and flip bacon. Add some bacon grease to a unused part of the griddle and put down the jalapenos. Put some weight on them to get a good contact patch. Cook till they are caramelized.

 

4. Check bacon and flip and cook to your liking. Remove to a paper towel to drain.  Flip the chicken and cook till internal temp is 185. Flip jalapeno's and char the other side. When charred, remove to the cutting board.

 

5. When chicken is done, remove to the cutting board. In a large bowl, add the cream cheese, shredded cheddar, mozzarella. Chop the jalapenos and chicken and add to the large cheese bowl. Chop the bacon and add to the bowl. Add some chopped green onion.

 

6. Add the packet of ranch seasoning and using your hands, mix well.

 

7. Cut the French loaf into thick pieces. Liberally add mayo to the sandwich side of the bread and take the sliced cheese and put two pieces on each sandwich. Using a spoon, spoon a big amount of the chicken/cheese mixture and put on top of the bread. Top with the second piece of bread and bring over to the griddle.

 

8. Spread the bacon grease out on the griddle and add the butter. When butter is melted add the sandwiches. Cook for a few minutes and check. Flip and toast the other side. To melt the cheese faster, add some water around the sandwiches and cover with a dome for a minute or so.  When melted to your liking, remove from griddle and enjoy
