Ingredients


  • 4 boneless skinless chicken thighs

  • 1 pound thick-cut bacon

  • Hussey's Chicken Dust

  • 4 jalapeños, chopped (without ribs and seeds)

  • 8 oz cream cheese, softened

  • 8 oz shredded mild cheddar cheese

  • 8 oz shredded mozzarella cheese

  • 3 green onions, chopped

  • 1 packet dry ranch seasoning

  • 1 French loaf of bread

  • 8 tbsp mayonnaise

  • 8 slices Havarti cheese

  • 8 slices pepper jack cheese

  • 1 stick butter


Directions


  1. Preheat your griddle to low and add the bacon. Cook it to your liking.

  2. While the bacon cooks, season the chicken with Chicken Dust. When the bacon starts to render, slide it over and add the chicken to the bacon grease.

  3. Cut the jalapeños in half, removing the seeds and ribs. Check and flip the bacon. Add some bacon grease to an unused part of the griddle and place the jalapeños down. Put some weight on them for good contact. Cook until they are caramelized.

  4. Check the bacon and flip it, cooking until it reaches your desired crispness. Remove it to a paper towel to drain. Flip the chicken and cook until the internal temperature reaches 185°F. Flip the jalapeños and char the other side. Once charred, remove them to the cutting board.

  5. When the chicken is done, remove it to the cutting board. In a large bowl, combine the cream cheese, shredded cheddar, and mozzarella. Chop the jalapeños and chicken, adding them to the cheese mixture. Chop the bacon and add it to the bowl. Toss in some chopped green onion.

  6. Add the packet of ranch seasoning and mix everything well using your hands.

  7. Cut the French loaf into thick pieces. Generously spread mayo on one side of each piece of bread. Place two slices of cheese on each sandwich. Spoon a generous amount of the chicken and cheese mixture on top of the bread. Top with the second piece of bread and bring it over to the griddle.

  8. Spread the bacon grease on the griddle and add the butter. Once the butter melts, add the sandwiches. Cook for a few minutes, then check. Flip and toast the other side. To melt the cheese faster, add some water around the sandwiches and cover with a dome for about a minute. When melted to your liking, remove from the griddle and enjoy.
