Perfect weeknight meal that's easy and quick to make. Add some rice or have it just as it is for a meal. The pineapple and sweet and sour sauce really set it off.
Ingredients:
1 lb boneless skinless chicken breast
1/4 cup cornstarch
1/4 tsp salt (to taste)
2 tbsp low sodium soy sauce (or regular)
3 tbsp avocado oil (or your fav saute oil)
Pepper (to taste)
1/2 cup chilli sauce
1/4 cup chili garlic sauce
1 package Dole pineapple chunks (drain juice but reserve)
Tbs ginger paste
Tbs garlic paste
Green onions for garnish at the end
Directions:
1. Preheat griddle to med/high. Chop chicken into bite size chunks and add to a bowl. Add soy sauce, salt, pepper and mix. Next add cornstarch. Mix well.
2. Add oil to your hot griddle and add chicken. Let cook a minute or two and flip. Keep flipping until done. When done, turn off the middle burners and turn down the outside burners to low.
3. Add chili sauce, garlic sauce, ginger paste and garlic paste. Add pineapple and mix well. Remove to a platter and garnish with green onions. Serve over rice.
