Greek Chicken w/Zucchini and Yellow Rice

This is such an easy chicken recipe is so simple, but very delicious. The Blackstone griddle makes this quick and easy too.



Ingredients:

3 Chicken breasts -- boned and skinned

5 slices pita bread  

2 zucchini thinly sliced

Chicken Marinade:

Juice of 2-3 lemons

1/2 cup olive oil

2 tsp garlic powder

2 tsp onion powder

1 Tbs dried oregano

2 tsp kosher salt

1/2 tsp ground black pepper

1 tsp chicken powder

1 tsp dried parsley

Squirt of honey (optional)

Tzatziki Sauce:

1/2 English cucumber (more or less if you want) grated and salted (about 1/2 teaspoon salt)

2 med clove garlic, grated (about 1 teaspoon)

2  containers (8oz ea) greek yogurt

1 Tbs chopped fresh dill

Juice of ½ - 1 lemon

Squirt of honey or teaspoon of sugar (optional)



Directions: 

1. Cut chicken in half lengthwise and then cube. Put in ziplock. Mix marinate and add to chicken and mix well. Marinate for 20 minutes on the counter then up to 2 hours in refrigerator.

 

2. Grate English cucumber and dry in paper towels. Mix Tzaziki sauce ingredients in a bowl adding cucumber last. . Cover and put in refrigerator to blend the ingredients.

 

3. When ready to cook, preheat griddle to high or around 420-450 degrees. Add some oil to one side of the griddle and add the Zuchinni slices down and cook till chard. Meanwhile, add oil to other side of griddle and drop the chicken. Spread out and keep flipping as it will cook fast.  Check and flip zucchini and cook the other side. Add salt, pepper and oregano to the zucchini.

 

4. When chicken and zucchini are done, move to the side of griddle. Clean the middle of griddle. Add pita bread and heat. Take zucchini and chicken off the griddle and put on a plate. Cut the pita bread into fourths. Serve with yellow rice and tzatzaki sauce.
