Mexican Pizza


1 ½ lbs 80/20 ground chuck

1 packet taco seasoning

8 Flour tortillas

1 can Refried beans (little chicken stock and salt added)

2 cups Fiesta blend cheese

1 can Red Enchilada sauce

½ cup sour cream

½ avocados, seeded, peeled and mashed

1 tsp Tajin spice

1 juice of a lime

1 cup tomatoes, diced

½ cup Cilantro

½ Serrano peppers, sliced


Red onion

Oil for frying


Step 1

1. Preheat griddle to high on one side and low on the other. Use the high side for ground chuck and the other side for the tortillas.

Step 2

2. Put down ground chuck and while that is cooking, add refried beans to a pan and put on the back of the griddle to warm up.

Step 3

3. Next make the avocado crema. Mix sour cream, avocado, lime juice and Tajin seasoning with a little salt. When meat is cooked, add the taco seasoning and a little water and mix well. Turn down the burner to low and push to one side to keep warm. Check and stir the refried beans. Add some oil to the griddle and put down 4 tortillas. let them go for a minute or two and flip to crisp them up. When looking good start assembling them. To one of the tortillas add some refried beans and spread out on tortilla. Add some meat and cheese. Add some enchilada sauce on top of the cheese and top with another tortilla. Add more enchilada sauce on top tortilla followed by more cheese. Dome the tortilla to melt all the cheese. When cheese is melted, remove from griddle to cutting board and cut into quarters. Add tomatoes, shredded lettuce, serano peppers, chopped red onions and cilantro. Drizzle with avocado sauce and enjoy
