Shrimp & Grits

Shrimp and grits cooked on the Blackstone griddle! Yes this is a true southern delicacy that's got yummy veggies and BACON! There's many ways to cook this tasty dish. This just happens to be one of them. Cook this on the Blackstone griddle and your crowd will love it!



Ingredients

Grits

2 cups chicken stock (more as needed)

1 cup stone ground grits

3 tbsp butter

2 cups cheddar cheese

1 cup half and half or heavy whipping cream

1 - 2 tsp salt (more if needed)

½ tsp pepper

Sauce:

2 Juice of lemons

2 tbsp worcheshire sauce

3 tbsp butter

¼ cup onions

¼ cup bell peppers

¼ cup green onions

4 cloves of garlic

½ stick butter

4 slices bacon

1 lb shrimp

Directions

Step 1

1. Heat griddle to Medium. Add a pot and put chicken stock in and bring to a simmer. When simmering, slowly whisk in the grits and cook till they tighten up.

Step 2

2. Chop up bacon and put down on the griddle and render the fat. Cook crispy and save the fat. Stir the grits. Move the bacon to the side and put down veggie's minus the garlic ( leave the green part of green onion for garnish but add the white part to the griddle). Cook till soft and put them into a separate pan for the sauce. Add garlic to the sauce pan. Remove the bacon from griddle and set aside. Keep stirring grits until tight.

Step 3

3. When tight whist in the half and half and add the cheddar cheese and let get happy. In the meantime, add lemon juice and worshishire sauce to the sauce pan. let get hot but not boiling. If it gets too hot, remove from griddle.

Step 4

4. Season the shrimp on both sides and add some oil to the griddle and put shrimp down. While shrimp are cooking, add butter to the grits and stir. Remove from griddle and let them thicken. Cook shrimp about two mines per side. While the second side is cooking, add butter to sauce and stir. Season sauce to taste with salt and pepper. When shrimp are done, remove from griddle to a separate plate and start assembly.

Step 5

5. Add grits to a serving bowl. Add shrimp on to of the grits.Then add sauce on top of the grits followed by bacon bits and any leftover veggie's and some more seasoning.
