Smoked Bologna Burnt Ends

Bologna Burnt Ends could be your new appetizer. They are easy to make and so good. Make these for your favorite sporting event or just to sit by the pool relaxing. You won't be disappointed.



Ingredients:

1 chub  (3lbs) Bologna

1 tbsp mayonnaise

2 tbsp BBQ Rub

Kings Hawaiian pretzel bites * Optional

BBQ Sauce:

1/4 cup ketchup

1/2 cup yellow mustard

1/2 tsp red pepper flakes

1/4 cup apple cider vinegar

1/2 cup honey

3/4 cup brown sugar

1 tbsp Worcestershire sauce

2 tbsp Hussey Heifer Dust

1 pinch MSG * Optional




Directions:

 

1. Remove plastic covering from bologna. Square off the round part of bologna and then cut thick slices lengthwise. Cube into about 1" x 1" cubes.

 

2. Put cubes on a tray and add mayo. Massage into the bologna well and then add BBQ rub of choice. Take baking pan lined with foil and a baking rack and put bologna cubes on the rack making sure you have BBQ rub on all pieces.

 

3. Bring over to smoker and put rack in smoker and start pellet grill to 250 degrees. Check in one hour. While smoking, mix BBQ sauce ingredients.

 

4. When the bologna chunks get a good crust on them, pull off the smoker and brush on BBQ sauce being liberal when brushing it on. If desired, leave some bologna without sauce and dip in BBQ sauce.

 

5. Put the sauced bologna back in the smoker for about 5-10 minutes. Remove from smoker and drizzle with more sauce.

 

6. An alternative to add to the recipe is to take Kings Hawaiian pretzel bites. Cut in half and put a piece of bologna burnt end on the pretzel bite, dip it in BBQ sauce and eat.
