Chilaquiles are a classic Mexican breakfast dish that you can easily prepare on a griddle. This version features crispy chips, saucy goodness, sunny-side-up eggs, black beans, and queso fresco. Using leftover tortillas or fresh ones, this recipe comes together quickly. The flavors build beautifully right on the griddle, and this dish may just replace your usual breakfast routine. Ingredients You Will Need
To make your chilaquiles, gather the following ingredients:
15 small corn tortillas
Avocado oil (for frying)
2 tbsp Bacon Up
1 can taco fiesta black beans
4 large eggs
Hussey's Fiesta Dust
Making the Salsa Verde
For the salsa verde, you will need:
9 tomatillos, skin removed and cut in half
1 poblano pepper, cut in half and seeded
2 jalapeño peppers, cut in half and seeded
1/4 white onion, root and skin removed
4 cloves garlic, peeled
1/4 cup cilantro
Juice of one lime
2 tbsp chicken powder
Salt and pepper to taste
You can find Hussey's Fiesta Dust which is essential for flavoring your dish.
Directions to Cook Chilaquiles
Preheat the Griddle
Set your griddle to medium-high heat and add some avocado oil. Place the first five salsa verde ingredients on the griddle. Char them until they are to your liking. Once done, transfer everything to a blender. Add 1/4 cup of water and blend until smooth.
Prepare the Salsa Verde
Add the remaining salsa verde ingredients to the blender. Blend well until everything is mixed thoroughly. Season to taste with salt and pepper. Pour the salsa into a bowl and set aside.
Prepare the Tortillas
Cut the tortillas into bite-sized pieces. Add oil and Bacon Up to the griddle, then add the tortilla pieces. Mix them well to ensure an even fry. Turn off one burner while you fry the tortillas for better heat control.
Warm the Black Beans
While the tortillas are frying, warm the black beans on the other side of the griddle. Once the chips are fried to your desired crispiness, add a sprinkle of salt. Move the tortilla chips to the cooler part of the griddle and add a little more oil. Crack your eggs on the hot section to cook them.
Cook the Eggs
Season the eggs with Hussey's Fiesta Dust. Cook them to your preference— sunny-side up or over easy. While the eggs are cooking, drizzle some salsa verde over the tortilla chips and mix them up.
Assemble the Dish
When the eggs are ready, take your tortilla chips and place them on a plate. Add the warmed black beans next to the chips and top everything with the sunny-side-up eggs.
