Grilled Cheese Hot Dogs with Hussey Chili

Crispy cheese skirt. Toasted bun. Crosshatched hot dogs. Beefy griddle chili. This is the full build. This is certainly one you have to try. Simple, easy and oh so good.

Hussey Hot Dog Chili

Chili Ingredients

·        1 lb ground beef (80/20 preferred)

·        1/3 cup ketchup

·        1 tablespoon Heifer Dust (OR substitute: 1 tsp salt, 1/2 tsp black pepper, 1 tsp garlic powder, 1 tsp onion powder)

·        1 tablespoon Fiesta Dust (for chili-style flavor)

·        1 teaspoon beef bouillon powder (beef powder)

·        1/4 cup water (plus more as needed)

Chili Instructions

1.      Preheat griddle or skillet to medium-high.

2.      Add ground beef and break into very fine crumbles while browning.

3.      Drain or move excess grease aside.

4.      Add Heifer Dust (or SPGO), Fiesta Dust, and beef bouillon. Stir and let spices bloom 30 seconds.

5.      Stir in ketchup.

6.      Add water and mix until smooth and spoonable.

7.      Reduce heat to low and simmer 5–7 minutes until slightly thickened. Chili should be saucy, not dry.

Grilled Cheese Hot Dogs

Ingredients

·        4 hot dogs (crosshatched or split for extra texture)

·        4 top-split hot dog buns

·        1/4 cup mayonnaise (for bun toasting)

·        1 cup shredded white cheese

·        1 cup shredded yellow cheese

·        Optional: 1/2 cup pimento cheese

·        2 tablespoons butter (for griddle finish)

Instructions

8.      Preheat griddle to medium-low for buns and medium for hot dogs.

9.      Score hot dogs in a crosshatch pattern OR split down the center without cutting through.

10.  Cook hot dogs until browned and crispy in the cuts.

11.  Spread mayonnaise inside each bun. Toast cut-side down until lightly golden.

12.  Place hot dog into toasted bun.

13.  Add optional pimento cheese inside bun or on dog.

14.  Layer white and yellow shredded cheese generously over and around dog.

15.  Place assembled hot dog cheese-side down onto griddle to form a cheese crust (cheese skirt).

16.  Cook on low until cheese crisps and browns. Flip carefully to lightly toast opposite side.

17.  Remove from griddle and rest 1–2 minutes.

Final Assembly

18.  Spoon warm Hussey Hot Dog Chili over each grilled cheese hot dog.

19.  Serve immediately while cheese crust is crispy and chili is hot.

Note: This is a smooth hot dog chili — no beans, no chunks — built specifically to sit perfectly on a grilled cheese hot dog.
