Chicken Lettuce Wraps (Blackstone Griddle)

A family favorite we make almost weekly. Juicy chicken thighs, a sticky savory-sweet sauce, quick-pickled cucumbers, and a creamy peanut sauce wrapped up in butter lettuce. Simple, flexible, and dang good groceries.

Ingredients

Chicken

- 1½ lb boneless, skinless chicken thighs

- 1 tbsp avocado oil

- 2 tsp Chicken Dust (or your favorite poultry seasoning)

Sticky Soy-Garlic Sauce

- ⅓ cup low-sodium soy sauce

- 2 tbsp oyster sauce-

1½ tbsp chili garlic sauce

- 1½ tbsp garlic paste (or minced garlic)

- ½ tsp ground ginger

- 1½ tbsp honey

- Juice of ½ lime

Quick-Pickled Cucumbers

- 2 English or seedless cucumbers, sliced

- 1 tsp Chicken Dust

- 1 tbsp low-sodium soy sauce

- 1 tsp chili garlic sauce

- 1 tbsp honey

- 1 tsp sesame seeds

- 1 tsp avocado oil

Peanut Sauce

- ½ cup creamy peanut butter

- 2 tbsp low-sodium soy sauce

- Juice of ½ lime

- 1 tsp sesame oil (not toasted)

- 1 tsp garlic paste

- 1–3 tbsp warm water (to thin)

- 1–2 tsp honey, to taste

For Serving

- Butterhead or Bibb lettuce leaves

- ¼ cup chopped peanuts (optional)

- Sliced red onion (optional)

- Sliced red bell pepper (optional)

- Cilantro (optional)

- Sriracha (optional)

Instructions

1. Preheat the Blackstone griddle to medium heat (about 375–400°F).

2. Toss the chicken thighs with avocado oil and Chicken Dust until evenly coated.

3. Place chicken directly on the dry griddle (no extra oil needed). Cook 6–8 minutes per side until nicely browned and internal temperature reaches 165°F. Remove and rest.

4. Make the sticky soy-garlic sauce by combining all sauce ingredients in a jar or bowl. Shake or whisk well.

5. Prepare cucumbers by adding sliced cucumbers to a container with all cucumber ingredients. Seal and gently shake to bruise and coat. Set aside.

6. Make peanut sauce by whisking peanut butter, soy sauce, lime juice, sesame oil, garlic, and honey. Add warm water a little at a time until pourable.

7. Slice rested chicken into thick strips. Return chicken to the griddle on low heat.

8. Add optional onions and peppers to the griddle. Pour most of the sticky soy-garlic sauce over the chicken and toss just until coated and glossy. Remove from heat.

9. Assemble lettuce wraps with chicken, cucumbers, peanut sauce, and desired toppings.


Notes & Tips

- Chicken thighs are forgiving and stay juicy even if slightly overcooked.

- Ground chicken works, but sliced thighs bring more flavor and texture

.- Peanut sauce is great on rice bowls, noodles, or grilled veggies

.- Add fish sauce to the soy-garlic sauce if you want extra funk.
