Double Decker Tacos

Inspired by Jeff Mauro from The Kitchen on Food Network, these tacos are like if Taco Bell met your favorite street taco joint—and had a flavor-packed baby! Griddled to perfection on the Blackstone, these are crunchy, cheesy, and downright addictive. You’ve gotta try 'em!



Ingredients:

1/2 onion, diced

bacon up or oil

1 package (9oz) chorizo

1 pound ground beef 80/20

Hussey's Fiesta Dust

Hussey's Heifer Dust

6 oz tomato puree

8 taco size flour tortillas

1 can refried beans

2 cups shredded Mexican cheese blend

1 tomato, diced

shredded lettuce

pickled jalapenos

Crema:

2 tbsp sour cream

1 tbsp Buttermilk

1 tsp Tapatio hot sauce

juice of 1/2 lemon or lime





Directions:

 

1. Preheat griddle to low. Mix the ingredients for crema and set aside. Dice onion and add to griddle. Add a tablespoon of bacon up to onions and mix. Move to the side.

 

2. Put down the Chorizo on the griddle as well as the ground beef. Cook both and chop while they are cooking. Check onions and move to the side when cooked. When Chirizo and ground beef is almost cooked, add onions and season with Fiesta Dust. Mix the two meats together.

 

3. Add tomato puree to the meat mixture and mix. Add some Heifer Dust to the meat mixture. Mix well and slide the meat to the side.

 

4. Turn the other three burners to high and add 3-4 tablespoons of bacon up and let melt. Using the side of the griddle fry 4 tortillas in the shape of a taco. When crispy flip and do the other side. When done, remove to the cutting board.

 

5. Put about half a can of refried beans and put on griddle to heat up. Put the other 4 tortillas on griddle to warm up, about 20 seconds per side.

 

6. Turn griddle back to low and put four piles of Mexican cheese down on the griddle. Take the warm tortillas and put some refried beans on the tortilla and put over cheese with bean side down over the cheese. When cheese is melted, flip and put the taco shell tortilla on the cheese side of the tortilla.

 

7. To build, take a shell and add some meat mixture followed by shredded lettuce then tomatoes. Add crema and pickled jalapenos and dig in.
