Flavor-Packed Double Decker Tacos

Inspired by Jeff Mauro from The Kitchen on Food Network, these tacos are a perfect blend of Taco Bell’s convenience and the authentic taste of your favorite street taco joint. Griddled to perfection on the Blackstone, they are crunchy, cheesy, and downright addictive. You’ve gotta try 'em!

Ingredients
To create these delicious tacos, you will need the following ingredients:
1/2 onion, diced
Bacon up or oil for cooking
1 package (9oz) chorizo
1 pound of ground beef (80/20)
Hussey's Fiesta Dust
Hussey's Heifer Dust
6 oz tomato puree
8 taco-size flour tortillas
1 can of refried beans
2 cups shredded Mexican cheese blend
1 tomato, diced
Shredded lettuce
Pickled jalapeños
Crema:
2 tbsp sour cream
1 tbsp buttermilk
1 tsp Tapatio hot sauce
Juice of 1/2 lemon or lime

Directions
Follow these simple steps to create your tacos:
Preheat the griddle to low heat. In a mixing bowl, combine the ingredients for the crema and set it aside. Dice the onion and add it to the griddle with a tablespoon of bacon or oil. Mix well and move to the side once cooked.
Add the chorizo and ground beef to the griddle. Cook both meats, chopping them as they cook. Once the onions are thoroughly cooked, mix them back in with the meat. Season with Hussey's Fiesta Dust for extra flavor.
Pour the tomato puree into the meat mixture, stirring well. Add a sprinkle of Hussey's Heifer Dust, mix again, and slide the meat to the side of the griddle to keep warm.
Increase the temperature on three burners to high. Add 3-4 tablespoons of bacon or oil and let it melt. Using the side of the griddle, fry 4 tortillas shaped like tacos until crispy. Flip them to crisp up the other side. Once done, transfer them to a cutting board.
Heat half a can of refried beans on the griddle. Warm the remaining 4 tortillas for about 20 seconds per side.
Lower the griddle heat back to low. Place four piles of shredded Mexican cheese on the griddle. Take the warm tortillas, spread refried beans on each, and place them cheese-side down over the melted cheese. Flip the tortillas to ensure the cheese is melted, then add the taco shell on top.
To assemble the tacos, take a shell and fill it with the meat mixture. Top it off with shredded lettuce, diced tomatoes, homemade crema, and pickled jalapeños. Enjoy your creation!
