This easy breakfast dish on the griddle is great to clean out your fridge or just to make in general.
Ingredients
32 oz frozen hash brown potatoes
8 large eggs
1 /2 pound ham slices
2 cups shredded cheese
2 jalapeno chiles, stemmed, seeded and finely diced (optional)
Directions
Step 1
1 First put a bag of frozen hash browns in a bowl and microwave for 5 minutes on high. Set griddle on low and preheat
Step 2
2 Cube up ham and set aside. Slice jalapeno's into small pieces with or without seeds. Check temp of griddle. You want 375 degrees.
Step 3
3 Put down avocado oil and mix with some butter. Add hash browns in this layer and cook for 4 minutes on first side and check for doneness. If they need to cook more, let go another 2 minutes and flip. While they are cooking put butter down on other side of griddle and add jalapeno's and sweat. Add ham and heat up. Season hash browns with salt and pepper.
Step 4
4 Mix everything together and add cheese. While cheese is melting, add some butter to the griddle and cook your eggs to your liking. Add hash brown mixture to a bowl and top with eggs
