Monster Breakfast Burrito w/White Gravy

Start your day off RIGHT with this MONSTER Breakfast Burrito made on the Blackstone Griddle! This bad boy weighs over 2 pounds and is packed with eggs, bacon, sausage, potatoes, and cheesy goodness — all wrapped up tight and toasted to perfection. If you're looking for an easy, over-the-top breakfast recipe that'll feed a hungry crowd, you're in the right spot. This recipe is perfect for weekend brunches, tailgates, or just making your neighbors jealous!

Ingredients
2 large russet potatoes
1 lb bacon
1 lb breakfast sausage
12 large eggs
1/2 stick butter
1 1/4 cup half and half, divided
1 small onion, chopped
2 small jalapeno chiles, stemmed, seeded, and finely diced
2 tbsp flour
2 Old El Paso Grande flour tortillas
1 cup shredded Colby-jack cheese
1 cup shredded mozzarella cheese, divided
Directions
Start by placing the potatoes on a plate and microwaving them. Set the microwave for one potato. You want to par-cook them until almost done, then finish on the griddle.
Preheat the griddle to low and add the bacon. While the bacon is cooking, add the sausage.
In a bowl, whisk the eggs. Add 1/4 cup of half and half and season with Heifer Dust. Set this mixture aside.
Chop the onion and jalapeno and set them aside. Remove the potatoes from the microwave and chop them into bite-sized pieces.
Check the bacon. When it’s cooked to your liking, move it to one side of the griddle. Turn off that burner to keep the bacon warm. Chop up the sausage into small pieces and cook until done. Add the potatoes to the bacon fat, then add the onions and peppers next to the potatoes. Pour the pooled bacon grease over the potatoes and onions.
Increase the heat to medium on the potatoes. Remove the bacon from the griddle and turn the burner back on to medium. Finish cooking and chopping the sausage, moving it to one side. Continue cooking the potatoes until crispy. Cook the onions until soft, then add them to the potatoes. Season everything with Fiesta Dust and add more Heifer Dust to the potatoes if needed.
Once everything is done, place the potatoes, sausage, and bacon on a tray, keeping them separated.
Take a pan and place it on the griddle. Add the bacon fat from the griddle and 2 tablespoons of flour. Cook for about a minute, then add 1/2 cup of half and half. If it thickens too much, add another 1/2 cup of half and half. Season with Heifer Dust to taste. Remove from the griddle.
Scrape the griddle and turn off the burners. Add 1/2 stick of butter and spread it over the griddle. Slowly add the eggs, keeping them confined as much as possible. Watch how fast they cook. If you need more heat, turn on the left and right burners. Start flipping the eggs. When cooked, add them to the tray with the potatoes and meat.
10. Place 2 large tortillas on the griddle and heat for about a minute. Stack the tortillas on top of each other and return them to the original bag. This steams them, making them easier to roll.
11. When ready, take a tortilla and add a good portion of eggs, some sausage, two slices of bacon, some cheese, potatoes, and more cheese. Roll it into a burrito.
12. Place the finished burritos seam-side down on the griddle and brown them on all sides. While doing this, add the gravy to the griddle to warm it back up.
