Monster Breakfast Burrito w/White Gravy

Start your day off RIGHT with this MONSTER Breakfast Burrito made on the Blackstone Griddle! This bad boy is over 2 pounds and packed with eggs, bacon, sausage, potatoes, and cheesy goodness — all wrapped up tight and toasted to perfection. If you're looking for an easy, over-the-top breakfast recipe that'll feed a hungry crowd, you're in the right spot. Perfect for weekend brunches, tailgates, or just making your neighbors jealous!

Ingredients:
2 large russet potatoes
1 lb bacon
1 lb breakfast sausage
12 large eggs
1/2 stick butter
Hussey's Heifer Dust
Hussey's Fiesta Dust
1 1/4 cup half and half, divided
1 small onion chopped
2 small jalapeno chiles, stemmed, seeded and finely diced
2 tbsp flour
2 Old El Paso Grande flour tortillas
1 cup shredded Colby-jack cheese
1 cup shredded mozzarella cheese, divided
Directions:
1. Put the potatoes on a plate and put in microwave. Set for 1 potato. You want to par cook till almost done and finish on the griddle.
2. Preheat griddle to low and put down the bacon. While bacon is cooking, put down the sausage.
3. In a bowl, add the eggs and whisk them up. Add 1/4 cup of half and half and season with Heifer Dust and set aside.
4. Chop onion and jalapeno and set aside. Remove the potatoes from the microwave and chop up into bite sized pieces.
5. Check bacon and sausage and when bacon is done to your liking, move to one side of the griddle and turn off that burner to keep the bacon warm. Chop up sausage into small pieces and cook till done. Meanwhile, add potatoes to the bacon fat and the onions and peppers next to the potatoes. Take pooled bacon grease and pour over the potatoes and onions.
6. Turn heat up to medium on the potatoes. Remove the bacon from griddle and turn burner back on to medium. Finish cooking and chopping the sausage and move to one side. Continue cooking potatoes till crispy. Cook the onions till soft and then add them to the potatoes. Season the potatoes and sausage with Fiesta Dust. Add more Heifer Dust to the potatoes if needed.
7. When done, put potatoes, sausage and bacon on a tray keeping them separated.
8. Take a pan and put it on the griddle. Add the bacon fat from the griddle and 2 tablespoons of flour. Cook that for about a minute then add about 1/2 cup of half and half. If it thickens too much, add another 1/2 cup of half and half. Season with Heifer Dust to taste. Remove from griddle.
9. Scrape the griddle and turn off the burners. Add 1/2 stick of butter and spread over the griddle. Slowly, add eggs to the griddle and keep as confined as you can while pouring over the whole griddle. See how fast they cook and when you need more heat, turn on the left and right burners. Start flipping the eggs. When cooked, add to the tray with the potatoes and meat.
10. Put 2 grand tortillas on the griddle and heat for about a minute. Stack the tortillas on top of each other and put them back in the original bag. This steams them and makes them easier to roll.
11. When ready take a tortilla and add a good portion of eggs some sausage, two slices bacon, some cheese, potatoes and more cheese. Roll into a burrito
12. Take the finished burrito's and put them on the griddle seam side down and brown them up on all sides. While doing that, add the gravy to the griddle to warm back up.
