Incredible Chicken Fried Steak Sandwich

Crispy, golden, and packed with Southern comfort—this Country Fried Steak is everything you love about classic diner food! I cooked it up hot and fast on the Blackstone griddle, but it works just as well in a cast iron skillet on your stove. Tender cube steak, seasoned breading, and creamy white pepper gravy—perfect for breakfast, brunch, or a hearty dinner. Let’s get to sizzlin’!



Ingredients:

4 cube steaks

2 cups self-rising flour

Hussey's Heifer Dust

2 large eggs

1/4 cup milk for egg dredge

2 tbsp butter or bacon grease

2 tbsp flour * use leftover dredge flour if available

2 cups milk

4 Martin's Potato rolls

4 tbsp mayonnaise

4 slices tomato 




Directions:

 

1. Preheat griddle to low. Put self-rising flour on a shallow dish. Add enough Heifer Dust to flour to see specks in flour or about 2 tablespoons. In another shallow dish, whisk eggs and add some Texas Pete hot sauce, milk and some Heifer Dust. Mix well.

 

2. Take each cube steak and dredge it in flour, then egg and then back in the flour making sure to coat the cube steaks well. When they are all coated, put down some oil on the griddle, about 1/2 cup and add the cube steaks to the oil and shallow fry them.

 

3. While steaks are cooking, add a small pan to the griddle and add 2 tablespoons of butter or bacon grease. When melted, add 2 tablespoons of flour and mix well. Let cook for a minute or so to incorporate and turn a golden brown. Gradually add milk while whisking until you reach your desired consistency. It will thicken as it heats up.

 

4. While flour is cooking, check steaks and when golden, flip and cook on other side. Add more oil if needed.

 

5. When steaks are golden on both sides, put on a wire rack on the griddle to keep warm and crispy. When gravy is heated up and to your desired consistency, add a tablespoon of Heifer Dust to season.

 

6. Put mayo on the potato rolls and put on griddle cut side down to toast the rolls. Once toasted, add more mayo to the rolls followed by a piece of steak. Put some gravy on top of steak followed by a slice of tomato. Season tomatoes with some Heifer Dust. Put top bun on and enjoy
