Cheesesteak Tacos

ackstone griddle is an epic way to church up your taco game! Using nice ribeye meat and a cheese sauce makes these over the top! These tacos are easy to whip up and everyone will love them.



juice of 1 lime

1 1/2  tsp salt

1 tsp pepper

1 tsp cumin

1 tsp coriander

1 tsp garlic powder

1 tsp onion powder

1/2 tsp chili powder

1/2 tsp tajin powder

1/4 tsp beef powder

1 tbsp oil

Spice mix:

1 tsp salt

1/4 tsp pepper (more if desired)

2 tsp chilli powder (can add desired chilli pepper)

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp cumin

1/2 tsp coriander


1/2 tsp cayenne pepper


2 roma tomatoes diced

1/2 jalapeno chiles, stemmed, seeded and finely diced

juice of 1/2 lime

1/4 cup red onion diced

1/4 cup cilantro, chopped

1/2 tsp salt

1/4 tsp pepper

1/4 tsp cumin

Cheese Sauce:

6 oz white american cheese

1 tbsp butter

1/3 cup milk

dash cumin

dash garlic powder


2 lbs ribeye chopped into small pieces

Small flour tortilla

1 onion chopped

1 red pepper, cut into strips

2 jalapeno (optional)



1. Slice up ribeye and mix with ingredients of the marinade. Let marinate 2 hours. Mix ingredients for spice together and set aside. Mix ingredients for pico and let sit about 2 hours.


2. Season onion and red pepper with spice mix. Preheat griddle to low. Add oil and put down veggie's. Put whole jalapenos on griddle as well if using. Cook veggie's until soft. While cooking, add a pan with cheese sauce ingredients to the griddle and let heat up and incorporate and get melted. Keep an eye on veggie's and stir cheese sauce until melted.


3. Check veggie's and add some butter and a squeeze of lime. Crank up heat on an empty part of the griddle . Add some oil and drop the steak. When close to being done, squeeze a lime into the steak. When done, remove veggie's, steak and cheese sauce from griddle.


4. Clean off griddle of the oil and drop the tortillas. Warm for about 30 seconds per side. When warm put in a taco holder


5. To build, add steak to each taco followed by veggie's, cheese sauce, pico, sour cream and sliced jalapeno if using.
