Chicken & Waffle Breakfast Sandwich

1 ½ cups Buttermilk

2 large eggs

2 cups flour

3 tbsp Hussey Heifer Dust, divided

2 chicken breasts, cut in half lengthwise or 4 chicken cutlets

8 Eggo buttermilk waffles, partially thawed

2 tbsp butter

4 large eggs

4 slices cheese

4 tbsp mayonnaise

4 tsp Mikes Hot Honey


Step 1

1. Preheat griddle and put oil down. Enough oil to shallow fry chicken. While that is heating, take three shallow bowls and add buttermilk, eggs and Heifer Dust to the first bowl. Second bowl, add flour and 2 tbsp Heifer dust.

Step 2

2. Take chicken and dredge in buttermilk and then flour. Coat well and put in the third bowl. Let sit for 5 minutes. Once all 4 chicken pieces are coated bring to griddle.

Step 3

3. Add chicken to the oil and shallow fry for about 3-4 minutes per side or until internal temp reaches 165 degrees. While chicken is cooking add butter to a different part of the griddle and add the waffles to toast. once one side is toasted, flip and toast the other side.

Step 4

4. Remove waffles from griddle and turn off the area that the waffles were at. Add more butter and drop 4 eggs on the griddle. Cook eggs to your liking.

Step 5

5. Meanwhile, move chicken to bottom of griddle and clean off the oil and turn off the burners. Put down 4 waffles, add mayo to each then add chicken, hot honey, cheese and then egg. Top with another waffle that also has mayo. Put dome over waffles with some water to steam and melt cheese. Take off and enjoy
