Chorizo Nachos

These nachos were something else guys. Try them yourself!



Ingredients:

Queso dip:

1/2 lb white american cheese

1/2 cup half and half

1/2 cup Milk ( may need more depending on your desired thickness)

2-4 oz diced green chiles (fire roasted adds a nice flavor too, optional)

dash of cumin

dash Cayenne pepper (optional, I didn't add this)

Nachos:

1/2 lb chorizo

Chips

Lettuce

Tomato

Avocado

Lime

Red onion

Salsa

Sour cream

Cilantro

diced jalapenos




Directions:

 

1. On the griddle or on the stove, take a pan and heat all the queso ingredients until smooth and creamy. Keep warm on the griddle. Put a serving platter on the griddle to warm and put nacho chips in platter.

 

2. Put chorizo on griddle set to med/low and cook through breaking up as it cooks. Keep an eye on the cheese and stir.Keep working the chorizo until cooked. Make sure cheese is hot and melted.

 

3. When cooked, put chorizo on top of the chips. Pour the cheese on top of the chorizo. Top with lettuce, tomato, onion, cilantro, salsa , jalapeno, sliced avocado, a squeeze of lime and sour cream

 

4. Remove platter from griddle and enjoy
