Jalapeno poppers is a favorite of mine anyway with the pepper, bacon, cheese, but why not put all that in a wonton wrapper and onto your pellet grill/pellet smoker? I'd say that's a pretty good thing there.
Ingredients
8 oz block of cream cheese, softened
¼ cup mayo
¼ cup sour cream
12 oz bacon, cooked and chopped
3 jalapenos diced (I removed the seeds and such)
2 green onions, sliced
Favorite BBQ rub (optional, but wished I would have sprinkled with a sweet type rub)
8 oz shredded colby jack cheese. Can use cheddar too if you wish.
1 package wonton wrappers (find them in the produce section).
Directions
Step 1
1. Cook your bacon to your liking, either on the smoker or on the griddle. While bacon is cooking, spray a mini muffin tin with cooking spray. Put one wonton in each muffin hole pushing down to form a cup. Put muffin tin in the smoker and cook at 300 degrees for 10 minutes.
Step 2
2. In a bowl, mix cream cheese, shredded cheese (hold some out for the top), jalapenos, the white part of the green onion, mayo and sour cream. Mix well. When bacon is cooked, chop up and add half to filling mixture. Meanwhile take the wontons out after 10 minutes.
Step 3
3. Once the bacon is in the filling, add a tablespoon to each wonton. Sprinkle tops with some cheese and bacon. Put back into the smoker at 300 degrees and cook until the cheese melts (10-15 minutes) Top with green onion and enjoy
