Omelet, Bacon & Cheese

Learn how to make omelettes on the griddle with just a few easy steps. The inside and fillings are endless, but the technique seems to trip folks up. Hope you enjoy.


6 slices bacon, chopped

2 green onion chopped

3 large eggs

¼ cup heavy whipping cream

Salt & Pepper

¼ cup shredded Cheddar cheese

¼ cup shredded colby jack cheese



Step 1

1. Preheat griddle to low. Try and keep under 350 degrees. Turn off some burners if you can't keep it low. Add bacon and cook to your liking. Once cooked, remove and chop up and set aside. Chop green onion and set aside.

Step 2

2. Whisk eggs and heavy cream together. Add some salt and pepper to taste. Put butter down on griddle and pour eggs in a rectangle pattern just a bit longer then the spatula. Use your spatula to keep the right size. When eggs quit running add green onion, bacon and cheese.

Step 3

3. Starting with the back of the omelet, fold the top downward about 2-3 inches. Move to the bottom of omelet and do the same, folding upward. Then do the sides, folding toward the center. When the first side browns the way you like flip and cook the other side.

Step 4

4. Sprinkle with more green onion and some bacon. Top with salsa and hot sauce if desired.
