Prime Rib

Prime rib shouldn't be intimidating and in this video recipe, I'll show you exactly how to do your prime rib that your guest will love!


4 pound Prime rib roast

Hussey's Heifer Dust

Beef Powder

2 tbsp butter

Au Jus:

1 can can beef consomme

1 tsp beef powder

1 tsp beef concentrate

1 tsp Worcestershire sauce


Step 1

1. Optional: Dry brine prime rib by taking a teaspoon of salt per pound and rub meat. Put in fridge for 24 hours.

Step 2

2. Preheat smoker to 275 degrees. Take prime rib and season liberally with Hussey's Heifer Dust on all sides. Then liberally apply beef powder. Put prime rib on smoker rib side down and smoke till temp reaches 120 degrees.

Step 3

3. While the meat is smoking, heat griddle and add a pan. mix all au jus ingredients together and mix well. Simmer until it reduces slightly. Pour into a small bowl.

Step 4

4. When prime rib gets to 120, pull off and let sit a few minutes. Remove the strings. Get griddle up to med/high and put meat down. Add some butter and sear all sides. To speed things up, take a torch, add some butter and torch the top while searing the bottom on the griddle.

Step 5

5. Remove from griddle and let rest 10-15 minutes. Carve and enjoy.
