Pulled Pork Banh Mi Sandwich

There's always pulled pork leftover so why not make a sandwich that'll blow you away!! This pork banh mi is was a hit and I couldn't stop eating it!



Ingredients:

4 cups pulled pork

6 radish, sliced thin

1 cup match stick carrots

1 white onion, thin sliced

1/2 cup sugar

1/2 cup rice wine vinegar

salt

2 tbsp butter

1 Cucumber, thinly sliced

1 jalapeno pepper 

4 French bread rolls or Baguette's

Dukes Mayonnaise

1 cup fresh cilantro chopped




Direction:

 

1. Slice up radish, onion and carrots and put in a bowl. Get griddle to a medium heat and add a pan to heat. Add 1/2 cup water to the pan. Add 1/2 cup of sugar to water along with rice wine vinegar and a teaspoon of salt. Heat till everything is disolved and hot. Pour over the radish, carrot and onions. Mix well. Set for around 30 minutes.

 

2. While pickling, take cucumber and slice thin. Slice jalapeno into match sticks.

 

3. Slice French Bread Rolls lengthwise making sure not to cut through. Open bread up and pick out some of the bread so you can get more filling. Turn down griddle to low and add butter and melt. Toast buns in the butter.

 

4. To build, put mayo on the buns followed by pulled pork, then pickled veggie's, cucumbers and jalapeno's. Top with fresh cilantro and fold top bun on sandwich and enjoy.
