Arroz Con Polla (ACP)

Arroz Con Pollo or ACP is an Mexican (non-traditional style) restaurant dish that combines tender chicken, onions, and peppers with fluffy rice, and adding a cheese sauce takes it to a whole new level of deliciousness! 2 tbsp olive oil

1 cup Jasmine Rice

1 Tbs tomato paste

1 - 2 2 cloves garlic or just paste (about teaspoons)

1 Tbs Knorr Tomato Powder

1 /2 Tbs Knorr Chicken Powder

2 cups unsalted chicken stock

Cheese Sauce:

2 Tbs butter

2 Tbs flour

1 can evaporated milk

1 cup Oaxaca cheese

1 cup white american cheese

1 cup of mexican cheese blend

dash of cumin

1 Tbs chopped pickled jalapenos


1 lb chicken breast or thighs

1 sweet onion sliced thin

1 red bell pepper sliced thin

Step 1

1 Get a burner turned on and add a tablespoon or two of olive oil. Add 1 cup of Jasmine rice and toast till deep white. Add tomato paste and garlic and mix well. Once mixed, add 1/2 tablespoon of Knorr chicken powder and 1 tablespoon of Tomato powder. Once mixed, add two cups of chicken stock. Mix well and bring to a boil. Cover, lower heat to simmer and let go for 15-20 minutes. After 20 minutes, turn off burner and let sit.

Step 2

2 While the rice is cooking, take another pan and add two tablespoon of butter and add two tablespoon of flour and mix well to form a roux. When roux is looking good, add one cup of milk and one cup of evaporated milk. Bring to a slight simmer. Cut up all cheese into chunks and add to the roux mixture. If mixture gets to thick, add milk. Stir until all is mixed and smooth. Add chopped jalapeno and just a dash of cumin. Keep warm and stir occasionally

Step 3

3 Chop the red pepper and the onion. Cut chicken into thin strips. Put oil down on the griddle and add chicken. Add butter to the other side of the griddle and put down veggie's and cook till done. Season with Blackstone's Essential Blend and some season salt. Put on a medium heat griddle and cook chicken through to 160-165 degrees. Once done, remove from griddle.

Step 4

4 To build, add some rice to a plate. Add some chicken followed by some veggie's. Add the cheese sauce and garnish with fresh chopped Cilantro
