Ingredients
Glaze:
1/4 cup soy sauce
2 tbsp dark soy sauce
1/4 cup balsamic vinegar
1/4 cup honey
1 tsp Hussey Heifer Dust
1 tbsp ginger paste
1 tbsp garlic paste
1 tsp sriracha sauce
Asian Chicken:
1 pound boneless, skinless chicken thighs
6 baby Bok Choy
1 tsp apple cider vinegar
1 tbsp white sesame seeds
Chopped green onion
Directions
Preheat your griddle to medium-high heat, about 420 degrees. While it heats up, mix the glaze ingredients together and set aside.
Place the chicken in a zip-lock bag. Pour about half of the glaze over the chicken. Mix well to ensure the chicken is coated. Let it marinate for at least 30 minutes but up to 24 hours for better flavor.
Prepare the Bok Choy by cutting it down the middle lengthwise. Add some oil or bacon to the griddle, then place the Bok Choy cut-side down.
Add the marinated chicken to the other side of the griddle. Cook both until the chicken reaches an internal temperature of 185 degrees. Add some glaze to the chicken midway through cooking.
Flip the Bok Choy when the first side is charred to your liking. Spray it with some oil and sprinkle some Heifer Dust on top. Continue cooking until the second side is also charred.
Near the end of cooking, drizzle some glaze over the Bok Choy, then add about 1 teaspoon of apple cider vinegar for extra flavor.
As the chicken finishes cooking, apply more glaze to it while saving some for presentation. When the chicken reaches an internal temperature of 185 degrees, remove both the Bok Choy and chicken from the griddle.
On a platter, arrange the chicken and Bok Choy. Garnish the chicken with additional glaze, white sesame seeds, and chopped green onion.

This Asian chicken dish pairs wonderfully with steamed rice or quinoa. If you're looking for a low-carb option, try serving it with cauliflower rice. The tangy glaze complements the chicken and Bok Choy nicely, enhancing their flavors.
