Easy Pizza Recipe for the Blackstone Griddle

Ingredients
1 package Rhodes Dinner Rolls
1/2 cup semolina flour
1/2 cup 00 flour or cake flour
5 slices ready-cooked bacon, chopped
25 pieces mini pepperoni
5 tbsp pizza sauce
1 cup shredded mozzarella cheese (6 ounces)
Directions
Preheat your griddle to low.
On a half sheet pan, add some oil and place the Rhodes dinner roll dough on the pan. Cover with foil and let them rise for about 30 minutes.
Mix the semolina and 00 flour together. Gently roll each dough ball in the flour. Place them on a cutting board and stretch them out to make individual pizza doughs. Set them aside on another pan until you have the amount you want to cook.
Drizzle some oil on the griddle and place the pizza dough down. Add the bacon to warm it up. Cook the dough until it's halfway cooked and golden on the bottom. Move the pizza dough to the bottom of the griddle.
While the dough is cooking on the other side, place 5 mini pepperoni and a slice of chopped bacon in front of each pizza dough. Add an ounce of mozzarella cheese on top of the pepperoni and let it melt.
Flip the pizza dough and add 1 tablespoon of sauce to each. Take the dough and flip it onto the cheese. Let it sit for a minute to melt everything. Then, flip it over so the cheese is now on top. Cook until the bottom is golden and crispy.
Remove from the griddle, cut into pieces, and enjoy!
