Easy Bologna Breakfast Sandwich

Bologna, egg, and cheese breakfast sandwich doesn't get no better than frying the bologna up in some butter then toasting the bread up. The egg has some drippyness to it too. WHooo wee!!! Enjoy this amazing breakfast sandwich fixed on the Blackstone griddle.


4 slices thick cut bologna, like Curtis brand

4 large eggs

4 slices cheese, your choice ( I like American)

8 slices thick cut potato bread (Pepperidge farms)

3 tbsp butter

4 tbsp Dukes Mayonnaise

4 tsp mustard- optional

4 slices tomato



1. Preheat griddle to low. Add some butter and put down the bologna slices in the butter. Next, put more butter down and put down bread to toast. When bread is toasted on one side, flip and toast the other side. Flip bologna and add a slice of cheese.


2. Add some more butter to another spot on the griddle and add your eggs. Season with salt and pepper. After a minute or so, flip eggs and cook another minute.


3. When bread is toasted add mayonnaise and mustard. Add bologna and then an egg . Top with a slice of tomato seasoned with salt and pepper.  Put top piece of toast and enjoy
