Greek Mediterranean Bowl

This Greek Bowl is straight-up GOOD GROCERIES, y’all! We’re talking seasoned ground beef (or lamb), grilled veggies, fresh cucumbers and tomatoes, red onions, creamy tzatziki, and crumbled feta — all built on a bed of rice or greens.
Made from scratch on the Blackstone griddle, this one’s healthy, hearty, and packed with flavor. Whether you’re meal-preppin’ or just hungry for something fresh and easy, give this Mediterranean-style bowl a go. I promise... you’ll wanna make it again next week!

What’s in the Bowl
Ground beef, lamb, chicken, anything! (your call!) Griddled veggies, fresh tomatoes & cukes, creamy tzatziki sauce, crumbled feta, and optional: over lettuce or rice. Cooked with a little Heifer Dust and a whole lotta love!
Ingredients
Salad Ingredients
1/2 large cucumber
1/2 red onion
12 grape tomatoes, cut in half
Salt & pepper
1 tsp oregano
1 tbsp olive oil
Juice of 1/2 lemon
Drizzle of honey
Greek Bowl
1/2 large red onion, cut into bite-sized pieces
1 large red bell pepper, seeded and chopped
1 large zucchini, chopped
1 bag cauliflower rice
1 1/2 pounds ground beef (85/15)
1 tbsp Hussey's Heifer Dust
1 tsp oregano
12 grape tomatoes, left whole
Juice of one lemon
1 tbsp tzatziki sauce
2 tbsp feta cheese, crumbled
Directions
Prepare the Salad
Start by making your salad first. Slice the cucumber in half lengthwise and then into half-moons. Add these to a bowl. Next, slice the red onion into half-moon slices and add them to the salad bowl. Slice the grape tomatoes in half and toss them in. Season with salt, pepper, oregano, olive oil, and the juice of 1/2 lemon. Mix well. Add a drizzle of honey, mix again, and set aside to marinate.
Heat the Griddle
Turn your griddle on and set it to medium/high heat.
Chop the Vegetables
For the bowl, roughly chop the red onion. Next, seed and chop the red pepper. Roughly chop the zucchini into bite-sized pieces.
Cook the Vegetables
Add some oil to the griddle. Place the red pepper and onion on one section of the griddle, and the zucchini on another. Season the peppers and onions with salt, pepper, and oregano. Mix until they have some crunch but are cooked through.
Add Cauliflower Rice
While the veggies are cooking, add the cauliflower rice to the griddle. Add some oil, salt, and pepper to the cauliflower and mix. Let it cook until heated through.
Combine Veggies
When the zucchini is cooked and crunchy, season it with salt and pepper. Mix it with the peppers and onions. Move everything to one side of the griddle.
Cook the Ground Beef
Ramp up the temperature to high and add oil. Drop the ground beef onto the griddle and season it with Heifer Dust and oregano. Flatten it out to get caramelized and cooked through. Flip it, cook the other side, then break it up into pieces. Just before the beef is done, add about 12 more grape tomatoes to the griddle. Drizzle with oil and sprinkle with salt. Cook until they start to blister. Add some more oregano to both the beef and the tomatoes.
Mix Everything Together
Mix the tomatoes with the other veggies. Combine all the veggies with the beef. Squeeze the juice of 1/2 lemon into the rice and meat mixture and stir. Turn off the griddle and get ready to build the bowl.
Assemble the Bowl
Take a bowl and put cauliflower rice on the bottom. Add a healthy portion of the meat and veggie mixture. Bring it to the cutting board and add a generous portion of the salad.
10. Finish with Toppings
Top it off with a tablespoon of tzatziki sauce, some crumbled feta cheese, and a little lemon juice. Enjoy!
