Egg in a Hole Waffle Sandwich

Great way to start the day is with this Egg in a Hole Breakfast Sandwich. It tastes as good as it looks.



Ingredients:

4 frozen waffles

2 tbsp butter

1/2 lb breakfast sausage (I like Neeses)

4 large eggs

2 tbsp maple syrup

2 tbsp Dukes Mayonnaise

4 slices cheese 




Directions:

 

1. Using a small biscuit cutter, cut a hole in the center of your defrosted waffles. Add butter to a pre heated griddle (set to low). Add the waffles. Divide the sausage into two patties the size of the waffle and put them on the griddle.

 

2. Adjust the temp of griddle by turning off certain sections of griddle to keep the heat down.

 

3. When waffles are toasted on one side, flip them over and toast the other side. Once flipped, put a pat of butter in the circle of the waffle and add an egg to each hole. Salt and pepper the eggs. Check sausage and flip till cooked.

 

4. Cook the egg on the first side till set. Then flip the waffle to cook the other side of the egg. Cook to your liking. I cook till it runs just a bit so it's not too messy.

 

5. Once waffle is flipped, add mayo to each waffle being careful to not break the egg. Add a slice of cheese to each waffle and top with a sausage patty to two of the waffles. Take the other waffle with cheese and top the other two waffles making a sandwich. Add maple syrup to a small ramekin to use for dipping.
