Grilled Cheese Hot Dogs are a thing and might be your new favorite way to eat hot dogs. Why not though, it's cheesy and hot doggy! Haha. I saw Chiles and Smoke do these and looked so delicious (link to his channel is below).
Ingredients:
4 favorite hot dogs
2 tbsp butter
Heifer Dust
4 oz sharp cheddar cheese, grated
4 oz Colby Jack cheese, grated
pickled jalapeno's
4 hot dog buns
2 tbsp Dukes Mayonnaise
Dipping Sauce:
1/2 cup Dukes Mayonnaise
2 tsp yellow mustard
2 tsp Dijon-style mustard
1 tbsp honey
1/2 tsp rice wine vinegar OR white vinegar
1/4 tsp heifer dust

1. Preheat griddle to low. Score the hot dogs in an X pattern on both sides. Put some butter down on the griddle and let melt. Add the hot dogs and season with Heifer Dust.

2. Using a block of cheddar and colby jack, grate about half the block. Flip hot dogs when starting to brown up. Keep fliping hot dogs until all sides are cooked to your liking.

3. Open up the hot dog buns and put some mayonnaise on each bun. Add both cheeses to the bun then add some jalapeno's. Add a hot dog to each bun and adjust griddle temp to 325-350 degrees. Stuff the hot dog with more cheese. Add more butter to the griddle and spread out. Put hot dog cut side down on the griddle and press down. Cook 2-3 minutes. While the dogs are cooking, mix the dipping sauce ingredients. Taste and adjust to your liking.

4. After 2-3 minutes of cooking the hot dogs, flip and cook for 2-3 more minutes. Add more cheese if needed and cook to melt the cheese. Remove from griddle and use dipping sauce to step it up a notch.
