Pancake Breakfast Tacos

My daughter asked about making these pancake tacos and honestly, I was skeptic but thought it would be good to film. So here we are, we're making these tacos and seeing if they're good or not!



Ingredients:

1 1/2 cups Krusteaz Buttermilk Pancake Mix

1 cup milk

1/2 tsp pumpkin spice or cinnamon

1/2 tsp cheerwine syrup

5 large eggs

1/2-pound breakfast sausage

1/4 cup half and half

1/2 tsp Hussey's Heifer Dust

2 tbsp butter

5 slices American cheese

pancake syrup * Optional

hot sauce * Optional




Directions:

 

1. Preheat griddle to low. In a large bowl, add pancake mix and milk. Whisk till just combined. Mix in pumpkin spice or cinnamon and Cheerwine syrup. Set aside and let rest.

 

2. Add sausage to griddle and break up while cooking. If needed, turn up the heat while cooking. While the sausage is cooking, add 5 eggs to a small bowl. Add the half and half and heifer dust and mix well.

 

3. While the sausage is cooking, move to one side of griddle and put down some butter to cook the taco shells (pancakes). Put down about 1/4 cup of batter and spread it out to make thin shell pancakes. Cook pancakes about 1-2 minutes per side or until golden. Flip and cook the other side. Keep flipping and breaking up the sausage.

 

4. When sausage is cooked, add the eggs to the sausage. Once the eggs start to cook, add the cheese and chop that into the sausage/egg mixture.

 

5. Take a taco stand and put the cooked pancakes in the stand. When sausage mixture is all melty and cooked, fill the pancake shells with the cooked sausage. Add some pancake syrup or hot sauce if desired and enjoy.
