Updated: Sep 22

Feed the Whole Family on a Budget with a Delicious Pork Chop Dinner

In this video, I show you how to make an entire pork chop dinner on the Blackstone griddle. This meal includes crispy potatoes, garlicky green beans with a touch of bacon, and juicy, well-seasoned pork chops. It's fast, simple, and budget-friendly!

Pork Chop Dinner

Ingredients

  • 4 Pork Chops

  • 2 cans new potatoes

  • 1 bag (12 oz) green beans

  • 2-3 slices bacon

  • Hussey's Heifer Dust

  • 1 tsp Paprika

Directions

  1. Preheat the griddle to medium-low, around 480 degrees. Season the pork chops on both sides with Heifer Dust.

  2. Drain the potatoes and cut them into quarters. Place them in a bowl, add some oil, and season with Heifer Dust and paprika. Mix well and set aside.

  3. Slice the bacon into chunks and place it on the preheated griddle. Render off some fat. Once some fat has rendered, add the green beans to the bacon fat. If there isn't enough fat, add a bit more oil. Pour in a generous amount of water and cover the green beans.

  4. While the green beans are cooking, move the bacon to the bottom of the griddle. Add the potatoes to the griddle. Drizzle some oil over the potatoes and spread them out to ensure good contact with the griddle.

  5. Check the green beans and stir. Add more water if needed, then cover them again. Flip the potatoes to cook until they develop a nice crust. Meanwhile, add the pork chops to the griddle.

  6. While the pork chops are cooking, uncover the green beans and mix in the bacon. Season with Heifer Dust. When the green beans are cooked, turn off the burner underneath them. Do the same for the potatoes when they are done.

  7. Cook the pork chops until the internal temperature reaches 140-145 degrees. Once cooked, remove the pork chops, green beans, and potatoes to a cutting board. Enjoy your inexpensive meal for four!

Why Cooking on a Blackstone Griddle is Great

Cooking on a Blackstone griddle offers several advantages. First, the large cooking surface allows you to prepare multiple items at once. This is especially helpful when feeding a family. You can cook your protein, veggies, and starches all at the same time.

Additionally, the griddle heats evenly, ensuring that everything cooks perfectly. You can achieve that nice sear on your pork chops while keeping the green beans tender and flavorful.

Tips for Perfect Pork Chops

To ensure your pork chops turn out juicy and flavorful, here are a few tips:

  • Choose the Right Cut: Bone-in pork chops tend to be juicier than boneless ones. If you can, opt for bone-in.

  • Brine the Chops: Soaking your pork chops in a brine solution for a few hours can enhance their flavor and moisture.

  • Rest Before Serving: Let the pork chops rest for a few minutes after cooking. This allows the juices to redistribute, making for a more succulent bite.

Pairing Suggestions

To complement your pork chop dinner, consider serving it with a refreshing salad or some crusty bread. A light vinaigrette can balance the richness of the pork and bacon.

Conclusion

Cooking a delicious meal for the whole family doesn’t have to break the bank. With this easy recipe for pork chops, crispy potatoes, and garlicky green beans, you can create a satisfying dinner in no time.

I LOVE the idea of canned potatoes on the Blackstone! I never think of canned potatoes, but what an easy and clever trick to have up your sleeve for a hectic day. And what goes better with green beans than BACON! Nuthin'! Thank you, Hussey! It was a great video.
