We love breakfast, so I decided to whip up some sausage, eggs, and cheese for the family, but I wanted a burrito. So I did just that. I added some salsa, creama, and hot sauce from my buddy Jeremiah M.
Ingredients
4 large tortillas
1 lb Sausage
16 oz Hash browns
8 large Eggs
2 cups Cheese
2 tbsp season salt
8 oz sliced mushrooms
1 /2 red pepper, cut into strips
1 /2 onion coarsely chopped
4 tbsp sour cream
Salsa
Hot sauce
Salt and pepper to taste
Directions
Step 1
1 Get griddle to 350 degrees. Add oil and put hash browns down. Get them in a thin layer and don't touch them. Add salt and Lowry's season salt. Add a pat of butter to the top of the hash browns.
Step 2
2 Put down the sausage. Break up and cook through. Put some more oil down and add veggie's adding salt & pepper.
Step 3
3 Whisk eggs and add milk if you want . After several minutes, flip hash browns and let go another few minutes or until crisp and browned. When veggie's are done and sausage is browned, move to the edge of the griddle to keep warm. Spread out the sausage on the griddle top and pour the eggs over the sausage. Sprinkle cheese on top of the eggs. Roll up like an omelet and let cook through.
Step 4
4 Add a tortilla to the griddle and add some water around it and close lid to steam tortilla for just a minute. Take the tortilla and add some cheese, egg, hash browns, veggie's and more cheese. Add some hot sauce and salsa if desired. Roll up the burrito and put back on the griddle to crunch up ( a minute or so). Slice and enjoy
