Smoked Meatloaf Sandwich

Ingredients

Bacon up or butter

1 onion chopped

3 tsp Heifer Dust

1 ½ lbs 80/20 ground chuck

1 cup milk

1 large egg

1 cup panko bread crumbs

1 tsp Worcestershire sauce

Glaze:

½ cup ketchup

1 tbsp yellow mustard

1 cup brown sugar

1 tsp Worcestershire sauce

Sandwiches:

4 tbsp butter

bacon up

8 slices Martin Butter Bread

2 tbsp mayonnaise

8 slices cheese

Tools Needed:

Directions

Step 1

1. Preheat griddle to low. Add bacon up or butter and add onions. Cook till marbleized.

Step 2

2. While cooking onions, put ground chuck in a bowl and add the panko bread crumbs. Then season meat with about a teaspoon of Heifer Dust. Add the onions to the meat bowl. In a measuring cup, add milk and egg and whisk together. Add worshtishire and mix. Add milk to meat and mix well but don't over mix it.

Step 3

3. When mixed put on a aluminum foil coated pan and make a loaf or put in loaf pan. Put more Heifer Dust on top.

Step 4

4. Put meat in a 275-300 degree smoker for about 1 hour. Meanwhile, mix the glaze ingredients together and set aside.

Step 5

5. After meatloaf has been in smoker for about 30 minutes, add some glaze and spread around the top of the meat and let cook another 30 minutes. When done, remove from smoker and slice on a cutting board.

Step 6

6. Heat the griddle back up and add the butter covering the griddle. Drop some bacon up and add the sliced meatloaf. On the other side of the griddle put down some butter bread and toast both sides as well as crusting both sides of the meatloaf slices.

Step 7

7. Once all is toasted, add mayo to the bread. Add cheese to each slice of meat. Put 2 pieces of meatloaf to each bread bottom. Add the top, and some glaze, slice and enjoy.
