Smoked Pork Loin Sliders

If you want a delicious meal in a short time, this is the way to go. This smoked pork loin will satisfy your taste buds as well as your wallet. Give this a try and be amazed.



Ingredients:

2 lb. pork loin  

2 tbsp Bacon Up

2 tbsp Hussey's Heifer Dust

2 tbsp BBQ rub (use what you like)

6 tbsp butter, divided

2 tbsp brown sugar, divided

2 tbsp BBQ sauce, divided

2 tbsp honey, divided

6 slider rolls

Slaw:

2 tbsp Dukes Mayonnaise

1 tsp apple cider vinegar

1 tbsp sugar

1/2 tsp BBQ rub

2 cups Cole slaw cabbage




Directions:

 

1. Preheat smoker to 250 degrees. Add your favorite smoking pellets or chunks.

 

2. If there is a small fat cap on one side of the pork loin, Score with a sharp knife in an X pattern. Coat the pork loin in bacon up as a binder then season with Heifer Dust as a base. Next add your favorite BBQ rub.

 

3. Put pork loin on smoker indirect and cook till about 120 degrees (about 30-40 minutes). While pork loin is cooking, put some foil on your cutting board and add 3 tbsp butter sliced on the foil. Add 1 tbsp brown sugar followed by 1 tbsp BBQ sauce and 1 tbsp honey.

 

4. When the pork loin is at 120-125 degrees. Remove from the smoker and but in the middle of the foil so pork loin covers the butter sauce. Fold the aluminum on the sides into a and top forming a boat but leaving the pork loin exposed. Repeat the butter, brown sugar, honey and BBQ sauce on top. Put back on the smoker and cook till 140 degrees, about 15 minutes.

 

5. While the pork is finishing, make the slaw. Mix slaw ingredients except the cabbage in a bowl and mix well. Once mixed, stir in the cabbage and mix well. If its dry, add mayo. If wet, add cabbage until your desired consistency.

 

6. When pork loin is at 145 degrees, pull from the smoker and let rest

 

7. To build: take your slider rolls and put some mayonnaise on each roll and put them on the griddle to toast. Once toasted, remove and add more mayo. Next, slice the pork Loin and put one slice of pork on each roll. Next add some slaw, bbq sauce and a sliced pickle.  Enjoy
